The culinary traditions of Azerbaijan — Sadzh and dolma

Azerbaijan is a country with a rich and ancient history. This fertile, prosperous land is one where, hundreds of years ago, caravans of merchants crossed paths, exchanging the customs and beliefs of different peoples. This exchange and diversity is clearly reflected in local cuisine in the abundance of meat, fish and vegetable dishes flavoured with aromatic herbs and spices. RTG TV host Igor Maximenko gets a taste of the subtleties of national Azerbaijani cuisine in one of Baku’s most famous restaurants where he tries his hand at preparing traditional dolma (stuffed vegetables or sometimes grape leaves) and sadj (a poultry, potato and aubergine dish).
