Borsch is one of the most famous dishes in modern Russian cuisine. It is difficult to say just how many different recipes there are to make this vibrant soup as almost every housewife has a special ingredient that sets her borsch apart from everyone else’s. It is said that borsch is originally a Ukrainian dish whose recipe Zaporozhian Cossacks brought with them to the southern Russian city of Krasnodar. Borsch is an ingredient-rich and complicated dish to prepare. The base of any good borsch is a meat broth. The other ingredients, how the soup is prepared and just what spices are used however all vary depending on the region. In Kuban-style borsch, for example, there are no beets – a main difference setting it apart from its Ukrainian counterpart.
